Avocado Salad with Heirloom Tomatoes

 

Who doesn’t love Avocados? When they’re in season, I admit we go a little nuts. While running errands yesterday, I picked some up and made this amazing avocado salad with heirloom tomatoes. This post is sponsored.

Who doesn’t love  good avocado salad?

It’s doesn’t get any easier than this.

Slice up some ripe avocados along with an heirloom tomato or two. Trust me on the heirloom tomato part, their flavor is amazing. Add a scoop of cottage cheese (we get ours from a local dairy) and a healthy drizzle of basalmic vinegar.  Season with salt and pepper to taste. The result is a delicious and fresh avocado salad that is perfect for summer. And it’s incredibly simple.

Other ways we enjoy avocados is to fry up some eggs and bacon and serve it over avocado slices. Sooo good. Little bit of Tabasco and bam! Delicious! My 3 year old loves to dip toast in the the leftovers. Really! She does!

  1. I like to eat avocados; as a side dish for breakfast, filled with tuna for lunch, smashed as guacamole for dinner or any meal for that matter. They make an awesome milkshake, too.

    Now, I hear that they can be used for face stuff, but I’m a dude and don’t use them that way.
