The kids went back to school today after a delay to the teacher strike. Needless to say I haven't been super motivated to think about making school lunches. Buying lunches at school for the kids isn't inexpensive, and now with Sebby AND Quincy in school it's going to add up fast.
But their lunches aren't the only ones that add up. Alan usually takes lunch to work everyday, and it's not always left overs. So that get's expensive too. One of my goals this year is to create some back to school lunches for adults that he'll enjoy, and that will be a little easier on the bank account.
Getting them to work safely is another factor, and for that I love Snapwear containers. The recipe.
We had Mexican Quinoa Salad tonight and it was really delicious, by tomorrow at lunch, the flavors are going to be really yummy. I was inspired by a friend of mine who mentioned combining beans, tomatoes and corn for lunch. I decided to add the quinoa and queso fresco to round out the flavors a little bit.
Mexican Quinoa Salad
Ingredients
1 cup Quinoa, uncooked
1 can black beans
1 can yellow corn
1 can diced tomatoes with chiles
½ cup queso fresca, crumbled
1 lime, cut into wedges
cilantro, if desired,
salt and pepper to taste.
Directions:
Prepare Quinoa according to directions. Simmer black beans for about 25 minutes. Combine black beans, corn and diced tomatoes into a deep skillet and stir until combined, and heat through. Salt and pepper to taste.
Serve quinoa with black bean mixture. Top with queso fresca and squeeze a lime wedge over it. Add cilantro if desired.
For lunch: put crumbled queso fresco in a small cup inside of your Snapware container so it stays fresh.
Back to School Lunches for Adults that make you feel like a kid
Just for fun, I raided our kid snacks to make a "snack" bento for Alan. I don't know if this version is enough food for a lunch, but I think he'll enjoy it. The bonus is I got to include Peanut candies, which we can't send to school. 🙂

I LOVE Snapware! I bought a set from Costco years ago before they made them with color. I could use an updated set, especially since I've lost several other the years lol!
