Blueberry compote recipe – make this for the weekend!

Blueberry Compote - The Maven of Social Media®

Blueberry Compote

2 1/2 cups fresh blueberries (you can use frozen during off season)
1/3 cup sugar
1/3 cup water

Combine 1 1/2 cups blueberries, sugar and 1/3 cup water in heavy small saucepan. Simmer uncovered over medium heat until berries burst, stirring often for about 10 minutes (gently though, so you don’t break up the fruit – you aren’t making jelly!)

Gently add remaining 1 cup blueberries. Cook another 8 minutes, stirring often.

The blueberry compote can be made 3 days ahead, store covered in the refrigerator. Serve warm.

How do you eat your blueberry compote?

Now, my kids would happily just eat the blueberry compote with a spoon, but I like to serve it with  mini pancakes and whipped cream. Or you could serve it over pound cake, or with crepes, or over your favorite yogurt.

Compote is unbelievably easy and the possibilities are endless!
