We’ve been eagerly awaiting Captain America : The Winter Soldier, which was released last week on September 9th. To get everyone excited, we had a little back to school party on Labor Day full of easy M&M recipes perfect for lunch boxes.

The summer has been crazy busy, and it seemed like we hadn’t seen my friend Cristi and her kids in forever. Plus my mom was in town, so what a better excuse to do some grilling and treat sampling. Hard to go wrong, right?

One of the things I’ve become aware of over the past few years is the impact of food allergies on children (and adults!) With all the struggles kids can face in school,  enjoying treats shouldn’t be one of them so all of my M&M recipes for the Captain America party are gluten-free.

Gluten-free chocolate chip cookies, crispy rice shields, popcorn balls, fruit and cream cheese marshmallow dip and even super hero juice! We even fired up the grill (and of course, I totally forgot to take piccys of our AMAZING chicken we had, so I owe you all that!)

Easy M&M Recipes with a Captain America Twist

Gluten-Free M&M Cookies
Ingredients
2 1/2 cups gluten-free flour blend
1 tsp baking powder
1 tsp salt
1 cup butter (softened – NOT MARGARINE!!!)
3/4 cup sugar
3/4 cup packed brown sugar
1 tsp vanilla extract
2 eggs
2 cups M&M’s

Directions
Preheat ove to 375. Combine flour, baking soda and salt in a bowl and set aside. Beat butter, sugars and vanilla in a large bowl until cream. Add eggs, one at a time and continue mixing until well combined. Slowly add in your flour mixture. Add in M&M’s. Drop by rounded teaspoons (I use a cookie scoop) on an ungreased cookie sheet (I line mine with parchment paper) and bake for about 9-11 minutes. Allow to sit on cookie sheet for 2 minutes to cool, and then transfer them to wire racks. Makes about 5 dozen.

M&M Crispy Rice Shields

8 cups Crispy rice cereal
1 cups M&M’s
40 regular sized marshmallows
3 tablespoons butter

Directions
Melt your butter over low heat in a large stock pot, and add marshmallows and stir occasionally until melted. Then add the rice cereal and gently fold it into the marshmallows until coated.

Pour your cereal and marshmallow mixture into a pan and allow to cool for a few minutes. Flatten it out and cut it into circles using a biscuit cutter. Embellish your circles with M&M’s and allow to cool so they harden up a little bit.
