Over the weekend my husband and I took our kids over to a friend, Evrim’s house for a movie and a pre-Valentine’s Day dinner.

When planning our simple Valentine’s meal, I checked out the recipes on Safeway’s website for some inspiration before I went shopping.Easy Valentines Dinner

I gathered my ingredients, picked out a pretty arrangement for our friend, and grabbed some pedestal vases to fill with conversation hearts for the kids.  Safeway has Duraflame fire logs too, so I picked one up to add some ambience to our evening.Fire with Duraflame log.

This recipe for Barbecue Meatloaf is from Safeway, but instead of making a whole loaf, I used a silicone cupcake mold to make individual portions.

Barbecue Meatloaf Hearts

1 lb Open Nature® Ground Beef
1/2 cup KRAFT THICK ‘N SPICY Original Barbecue Sauce, divided
1/2 cup O Organics® old-fashioned or quick-cooking oats, uncooked
1/2 cup finely chopped onion
1 O Organics® egg, beaten

PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce
SPRAY silicone muffin tin with O Organic Olive Oil spray
FILL muffin tins with meat mixture
BAKE 45 to 50 minutes or until cooked through (160°F). Let stand 5 minutes. Carefully remove hearts and place on plate. Top with remaining 1/4 cup barbecue sauce.


Barbecue Meatloaf HeartsThe Roasted Red Potatoes are super easy and a great recipe for kids to help prepare, just have to have an adult take them in and out of the oven. For the salad, you can choose from a variety of salad blends and add your favorite veggies. Dessert (which I confess got eaten before it could be photographed) is just some of our favorites from the Safeway bakery.
