This four cheese with bacon mac and cheese post is possible thanks to Safeway!
I'm no stranger to shopping at Safeway. It was our family grocery store growing up, and now I live down the street from one. When my kids are with me when I'm grocery shopping, we make a pit stop in the bakery for a cookie before I head back to the other side of the store to the dairy department to start my grocery shopping.
Safeway understands that many dairy items – such as milk, butter and cheese – are staples in families’ diets and need to be purchased regularly. I was inspired by some of my favorite Lucerne products to make a special Bacon Mac dish, it's perfect timing for the holidays as a dinner with a salad, or as a side dish if you're headed to a potluck or entertaining for a crowd.
It's delightfully rich and bacony. Check out the recipe and then check out the giveaway below. All of the dairy products used in the Bacon Mac and Cheese are Lucerne products from Safeway.
Bacon and Mac and Cheese (with four cheeses)
Ingredients
1 box (1 pound) bowtie pasta
8 slices bacon, chopped
1 tablespoon unsalted butter
3 tablespoons all-purpose flour
2 cups milk
¼ teaspoon salt
¼ teaspoon pepper
2 cups shredded sharp cheddar cheese
1 cup shredded cheddar-jack cheese
1 cup shredded mozzarella cheese
8 slices American cheese
¼ cup bread crumbs
Directions
1. Heat oven to 350 degrees F. Coat a largish broiler-safe baking dish with nonstick cooking spray.
2. Cook bowtie pasta for 8 minutes in salted boiling water, then drain an set aside.
3. Cook bacon in your oven for about 10-15 minutes until crisp, carefully turning halfway through. Transfer to paper towels.
4. Carefully pour off drippings into a large pasta pot. Add butter. Whisk in flour until smooth. Slowly whisk in milk to form a roux. Add salt and pepper "to taste" Bring to a boil over medium-high heat, then reduce heat and simmer about 2 minutes.
5. In large bowl, toss together shredded cheddar, cheddar-jack and mozzarella.
6. Remove roux from heat; whisk in American cheese and 1-¼ cups of the cheddar mixture. Toss bacon pieces with remaining shredded cheese.
7. In pasta pot, combine cooked pasta and cheese sauce. Pour half into prepared dish. Layer about half the bacon-cheese mixture then the remaining pasta. Top with the bacon-cheese mixture and some bread crumbs.
8. Bake at 350 degrees F for 20 minutes. Increase oven temperature to broil for 3 minutes, until top is lightly browned.
9. Cool slightly before serving.

In the winter I really like making a vegatable casserole using a winter blend - cauliflower, broccoli and brussell sprouts. You put the vegatables in the butter and let cook down a bit and brown add four a bit at a time and then pour into a cassarole dish. Add a cream base using Lucerne heavy cream,Lucerne milk, butter and cheese (I have used both cheddar and other cheese flavors) .I let mine bake down for a bit and then add either plain or flavored croutons and if the gang wants it, I add even a bit more cheese right before serving.
This is a great winter dish! You can also add ham chinks, chicken , turkey or any leftover protein and make it a one pot meal.
