Friends and Fun with Chef Boyardee!

It sounds crazy right? Eating Chef Boyardee as adults? I remember eating Chef Boyardee as a little kid, at friends and grandparents houses. It’s a childhood staple almost.

Chef Boyardee has several recipes to take your childhood nostalgia and make them all grown up.

We got together with some family friends for a dinner a la Chef Boyardee over the weekend. To help with our little party, we received an amazing box of goodies that included stylish Chef Boyardee wear, new colorful mixing bowls, special kitchen utensils for kids, two pieces of Le Cruset stoneware and note pads! Plus we had coupons for Chef Boyardee!  Talk about a super fun party box! It had EVERYTHING we needed to have an AMAZING dinner party!

There are lots of amazing recipes to choose from on the Chef Boyardee website. We decided to make the Chef Boyardee Ravioli Lasagna. It sounded easy and fun and we knew the kids would really like it!


PAM® Original No-Stick Cooking Spray
1 cup frozen loose cut leaf spinach
2 cans (15 oz each) Chef Boyardee® Beef Ravioli (we used the minis instead)
1 can (14.5 oz each) Hunt’s® Diced Tomatoes, drained well
1-1/2 teaspoons dried Italian seasoning
1 cup 1% low-fat cottage cheese
1/2 teaspoon ground black pepper
1 cup shredded Italian blend cheese


Preheat oven to 375°F. Spray 8×8-inch glass baking dish with cooking spray. Place spinach in microwave-safe bowl. Cover with plastic wrap and microwave on HIGH 2 minutes; squeeze spinach dry.

Combine ravioli, drained tomatoes and Italian seasoning in medium microwave-safe bowl.

Ravioli Mixture

Cover with plastic wrap and microwave on HIGH 3 to 4 minutes or until mixture is hot. Combine cottage cheese, spinach and black pepper in small bowl.

Stir some more.

Place half of ravioli mixture in bottom of baking dish. Top with half of cottage cheese mixture and 1/2 cup shredded cheese. Repeat layers. Bake 15 minutes or until cheese is hot and bubbly. (We added extra cheese!)

Dinner in just under 30 minutes, not bad at all right?

We topped it off with a little extra cheese, since cheese is ALWAYS a good thing. The verdict? It was pretty good. I think the person who most enjoyed it though was my daughter Quincy…

Each of the top ten finalists from all the accumulated weeks will have the chance to win the grand prize of free groceries for a year. The winner will be chosen based on a combined score of taste points and voting.
The voting period lasts March 26-April 8, 2012. Voters get entered into a daily sweepstakes for the chance to win $100. Share it on Facebook and get an extra sweepstakes entry.
