As promised, here’s your first bite into this years college basketball championship tournament. I”m excited to continue my partnership with Comcast and share all of this with you!
With over 120 hours of viewing in your future, you don’t want to go hungry. I’m sharing with you the first of several recipes that are sure to be a hit whether you’re watching college basketball with your family or friends.
Hummus is one of my go-to recipes for entertaining because it’s easy – packs protein and it’s easy to pair with chips and veggies alike. It’s really easy to make too. Hummus is traditionally made with cooked and mashed chickpeas, you can use other beans. It’s blended with tahini, olive oil, lemon juice and garlic, with salt and pepper to taste. If you have a blender, you can make it happen.
Here’s how I typically make hummus, the nice thing is, and it’s easy to make it your own.
2 cups drained cooked chickpeas, save liquid
1-2 tablespoons minced garlic (about 2-3 cloves)
1/3 cup virgin olive oil
1 tablespoon ground cumin
juice of 1 lemon
salt and pepper to taste
Combine all of the ingredients in a blender or food processor and puree until smooth, adding the chickpea liquid as needed.
Taste and add more lemon juice, cumin etc as desired. Serve drizzled with olive oil and a little cumin sprinkled on top for color!
Party food should be easy. So should watching your favorite college basketball teams play. XFINITY makes it simple.
Remember how I mentioned the Sports App? I’m meeting Kevin TOMORROW to get some real hands on experience with it. (because as tech savvy as I am – I’m a tiny bit clueless here)
What you need to know right now about the app is this:
“Xfinity is launching basketball “Extras” in the X1 Sports App, giving fans an interactive, real-time look into all things college hoops without the need for a second screen – a slam dunk just in time for The Big Dance. We’ve added even more interactivity and personalization to the experience – including the ability to view the full tournament bracket – complete with the latest scores and standings – directly on the TV, right next to all the action.”
BOOM. How cool is that? Watching the playoffs just got more interesting.
Stay tuned for my chat with Kevin and another recipe to enjoy during the playoffs. I might have a cocktail on my mind. ☺
How is XFINITY making your tourney viewing easier?
