I don’t know about you, but lattes aren’t the only think I like to indulge in at the local coffeeshop. In addition to that delicious, fat laden latte I usually get something from the bakery case too. Can you blame me? When I’m standing in line to order, the pastries are there, just calling my name.
The problem is, getting that latte AND the treat isn’t very good for my wallet OR my waistline.
Discovering International Delight Light Iced Coffee
On a recent trip to Walmart, I spied International Delight Light Iced Coffee in the dairy case and the wheels started turning. Could I enjoy reduced calories and still have a yummy drink? THEN I saw my favorite bagels and got another idea. Bread pudding. More specifically, Vanilla Latte Bread Pudding.
I’ve made bagel bread pudding in the past, and it’s been well, divine. So I figured by using a low-sugar coffee instead of milk, I could create a really unique flavor and create a fun coffee house experience.
I like to keep recipes like this simple, and by using ingredients I usually have on hand, I don’t have an excuse to run out to well, the coffeehouse!
The Maven’s Vanilla Latte Bagel Bread Pudding (for two)
3-4 mini bagels in the flavor of your choice
1 c. International Delight Light Iced Coffee in Vanilla Latte
(for extra flavor, add about 1/3 cup of raisins)
Preheat the oven to 375.
Cut mini bagels into quarters and place in a small baking dish
Combine iced coffee and egg, mixing throughly.
Slowly pour egg and coffee mixture over the bagel pieces, making sure to coat the pieces throughly.
Bake for about 30 minutes
Let your bread pudding cool (because trust me, it will be HOT) and then serve with a glass of International Delight Light Iced Coffee. If you want to be really indulgent, you can add a little rum 🙂 Don’t worry, I won’t tell anyone!
