With school starting in less than a week, it’s time to get back into some sort of routine, including meal planning. We haven’t had much of a meal schedule this summer, and it’s time to come up with some easy weeknights that not only the kids will love but meals that are simple to prepare.

Prepared Grilled Chicken Breast
Fresh tomatoes & basil
Bring about 4-6 quarts of water to boil. Add a of salt.
Add enough pasta to the water for a 2oz portion for each person (roughly ½ cup depending on the size of the pasta. For “al dente” pasta, boil for 11 minutes, stirring occasionally.
Drain pasta and return to pan. My time saver tip is to immediately add your favorite Barilla sauce to the pasta, you want enough to coat the pasta without being too saucy.
Top pasta with prepared grilled chicken and shredded cheese. Add fresh tomato wedges if in season and basil for garnish.
