It’s no secret I’m a cat lover, and while I haven’t quite ventured into crazy cat lady territory, I do suspect our neighbor’s cat Pewter might like me more than them. He spends all of his days lounging on our front porch or hanging in our yard, and just this past weekend, he climbed into my lap while I was helping my husband with his new road bike. I’d like to point out that when we moved into our house 2 years ago, Pewter was extremely skittish and wanted nothing to do with me.

Spicy Baked Chicken with Quinoa

  • 1 # chicken tenderloins
  • 3-4 tbsp of your favorite spicy rub
  • 2 tbsp Olive oil
  • 2 cups cooked quinoa
  1. Preheat your oven to 350.
  2. Place your chicken breasts in a glass or ceramic baking dish.
  3. Drizzle olive oil over chicken, coating both sides.
  4. Rub both sides of chicken with your favorite rub.
  5. Bake for about 20 minutes, unitl the internal temperature of your chicken is 160 or juices run clear.
  6. Serve with Quinoa and a salad!
