The best way to learn about something is to become fully immersed in it. I recently joined a group of bloggers in Chicago to learn more about the O Organics® line of products from Albertsons and Safeway. Albertsons’ and Safeway’s goal is to make eating organic something easy and affordable for all families. O Organics products are offered at a value compared to leading national organic brands, with more than 300 products—from fresh fruits and vegetables, to wholesome dairy and meats, cereals, snacks and more.  And this year, they will add more than 100 new items to the O Organics line!

While in Chicago, we met Registered Dietician, Annessa Chumbley.  She shared her knowledge and tips with us on how to naturally use organic ingredients in our cooking, as well as simple ways to add protein boosts by adding peanut butter to things like pancakes! Don’t these look amazing?

Then, we had the opportunity to experience a vast variety of products first hand, and even play in a real test kitchen to create our own recipes! I love flat bread and berries, so it seemed like an obvious combination. I wanted to showcase how easy it is to stop by my local Safeway on the way home from running errands and get everything you need for a last minute gathering.

Side note, bloggers will do almost whatever it takes to get a shot, including standing on chairs.

How else does a blogger end their day of cooking before they get on an airplane? A little bit of yoga of course. Relaxation and finding focus is important for everyone. We ended our day for some time to regroup before we jet-setted back to our families all over the country.

Back at home, it’s time to start thinking about holiday recipes and baking. Two of my favorite fall combinations are caramel and apples.

Caramel sauce is a fall staple in my house.  I really love it on ice cream, but it can be used for so many things: A dip for apples, Caramel apple cider, Caramel lattes and more!

Organic caramel sauce is made with things I almost always have on hand, so it can be whipped up if there is unexpected company – it has a way of making desserts and drinks instantly fancy!

Organic Caramel Sauce

At the recent O Organics ‘Organic for All™’ event in Chicago, I had the opportunity to work with a vast selection of O Organics products, but please check your local Albertsons family store to see what’s available in your area.
1 packed cup O Organics brown sugar
1/2 cup O Organics half-and-half
4 tablespoons O Organics sweet cream salted butter
1 tablespoon organic vanilla extract
Pinch of salt
Ingredients for organic caramel sauce
Combine the brown sugar, half-and-half, butter and salt in a small saucepan over medium-low heat. Cook while whisking for 5 to 7 minutes, being careful not to scorch, until the mixture thickens. Sauce will bubble up. Add the vanilla and cook another minute. Remove saucepan from heat, cool slightly and pour the sauce into a jar. Use warm, or refrigerate until cool.

Organic Caramel Sauce is super yummy with apples too! What would you pair it with?
