I love Chex Mix. It’s super easy to make and the kids love it, so lately I’ve been making it with a holiday theme. This latest round is all about the bunnies, so I headed to Target and picked up Annie’s Bunny Pretzels and some Annie’s Bunny cookies in addition to my regular Chex Mix additions, marshmallows and M&Ms.
Easter Bunny Chex Mix
2 cups Vanilla Chex
2 cups Chocolate Chex
2 cups Rice Chex
1 cup white “chocolate” chips
1/4 cup butter (NOT MARGARINE)
1/4 cup sweetened condensed milk
1 cup pretzel bunnies
1 cup bunny cookies
2 cups M&Ms (I used spring mix)
1 cup marshmallows (I used bunny shaped)
In a 2 cup glass measuring cup, melt the white “chocolate” chips and butter in the microwave for 1 minute at 50% power. Stir and cook for another 30 seconds at 50% power or until melted. Stir in sweetened condensed milk and heat again for about 1 minute until just boiling, but do not overcook or you will scorch your chocolate.
While your chips and butter are cooking, measure out your cereal in a large microwaveable bowl. When it’s ready, pour over your cereal mix and stir until well coated. Cook 1-3 minutes in 1 minute increments until glazed, stirring each minute.
Pour onto a large baking pan and add pretzels and cookies, stirring gently.
Allow to cool and then add your marshmallows and M&Ms. This is an important step or your candies will melt!
