It’s no doubt life can be hectic, our house this week was particularly crazy. The flu made its way through the kids, and we somehow avoided it. But healthy meals sort of fell by the wayside. With everyone finally on the mend, I planned a delicious meal for two, and headed to Metropolitan Market, a independent grocer here in Seattle.

I’m going to let you in on a secret. It’s possible to make an amazing steak dinner in less than 20 minutes. Alan and I love steak, so when I saw the Balsamic Marinated Flank Steak on the Metropolitan Market website, I knew we had to try it. For dessert? Their Best Berry Crisp.
You can definitely make this meal for your whole family, Alan and I decided to get a smaller steak and enjoy a (somewhat) quiet meal for ourselves. Other options include using leftovers for steak and eggs. Yum!
A few tips on how I made our simple and easy weeknight meal:
After you’ve marinated your steak for the recommended time, let it come to room temperature before cooking, you’ll get better results.
We prefer to pan fry our steak because it’s easier to control the temperature and heat of the cooking surface. I can prepare the perfect medium rare steak in less than 10 minutes in a pan.
Bake the Best Berry Crisp while the steak is coming to room temperature. It will be ready to enjoy shortly after you’ve had your dinner.
Buy pre-prepared frozen vegetables to save time.
Easy Weeknight Meal: Balsamic Marinated Flank Steak
Ingredients
1 (about 1-½ lbs) beef Flank Steak
Salt & pepper
BALSAMIC MARINADE:
¼ cup balsamic vinegar
2 tablespoon olive oil
1 tablespoon fresh basil, chopped or 1 teaspoon dry
1 ½ teaspoon Dijon-style mustard
1 clove garlic, minced
½ teaspoon sugar
