    Falafel Salad

    This falafel salad is weight watchers friendly, and one of my favorite easy dinner recipes.

    What is falafel?

    Falafel is a Middle Eastern dish of spiced mashed chickpeas. Seasons usually onions, scallions and spices like parsley, garlic, cumin and coriander. Chick peas are a versatile high protein food.

    Traditionally fried and served in a pita, you can broil them and serve them with a salad to save calories, especially calories from fat.

    Falafel Salad

    Ingredients for Falafel Salad

    1 cup falafel mix
    2 cups arugula mix
    12 grape tomatoes, quartered
    ¼ cup chopped cucumber
    ¼ cup tzatziki
    water

    Directions for Falafel Salad

    Line a cookie sheet with foil and spray with non stick spray. Preheat your broiler.
    Combine falafel mix with ⅓ cup water in a medium bowl, until water is absorbed, about 5-10 minutes.
    Form falafel mixture into 12 1" balls and place on prepared pan.
    Flatten balls into 1 ½" patties.
    Broil 4" from heat until golden brown, roughly two minutes on each side.
    Divide salad, cucumbers, and tomatoes evenly on 4 plates. Place 3 patties on each salad. Drizzle evenly with tzatziki dressing and serve immediately.

      I have never had falafel but I do enjoy chickpeas so it sounds like it would be so tasty as a salad. Can't wait to try this.

      This does sound really good! I like to cook up big batches of chickpeas in the slow cooker, I didn't realize falafel has them for an ingredient. I'm excited to try this!
