As the temperatures drop, I'm thinking about fuzzy socks and warm blankets. So when Darigold asked me to create a recipe inspired by their Heat 'N Serve Hot Cocoa, I was up for it. My kids love chocolate and waffles, so hot cocoa waffles with marshmallow creme seemed like an obvious choice.
What I love about this recipe for Hot Cocoa Waffles is that I don't have to bust out my stand mixer to make it. Okay, that's not the only thing. I mean who doesn't love a chocolate waffle?
I made about 12 waffles with this recipe, but your results will depend on what kind of waffle iron you have.
Hot Cocoa Waffles with Marshmallow Creme
INGREDIENTS for Hot Cocoa Waffles
2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 ½ cups Darigold Heat 'N Serve Hot Cocoa
⅓ cup Darigold butter, melted
1 teaspoon vanilla extract (do not use imitation!)
Ingredients for Marshmallow Creme
7oz container of marshmallow fluff
1 ½ cups Darigold Heavy Whipping Creme
PREPARATION for Hot Cocoa Waffles
Preheat waffle iron to desired temperature.
In a large bowl, mix together flour, salt, baking powder and sugar.
In a separate bowl, beat the eggs. Stir in the hot cocoa, butter and vanilla.
Pour the cocoa mixture into the flour mixture; beat until combined.
Ladle the batter into a preheated waffle iron - the amount will depend on your iron.
Cook the waffles until golden and crisp.
To prepare the marshmallow creme:
Combine marshmallow fluff and heavy whipping cream in a glass bowl, microwave on 50 percent power until melty, stir and heat more as needed.
Serve with marshmallow cream and chocolate drizzle.

Instructions

Not in the mood for waffles? Darigold Heat 'N Serve Hot Cocoa can be enjoyed right out of the carton. Just heat and serve.

These were easy abs GOOD! I made the mistake of putting in like 1 1/4 cup hot chocolate mix, instead of 1 1/2 cup of actual hot chocolate already made. I was wondering why there wasn’t enough liquid when the mistake hit me. LOL! Added the water and they were extra hot chocolatey. Yummy!
