Korean Ground Beef and Rice Bowls make the perfect weeknight meal.
My mom left some organic ground beef in my frig that needed to be cooked up this weekend, so I dug around my pantry to figure out what I could make that wasn't spaghetti or sloppy joes. Not that there is anything wrong with those simple meat dishes, I just wanted something different. We like Korean Beef, so why not Korean Ground Beef? The recipe was inspired, as all recipes are, by others.
I like to keep my pantry reasonable stocked so I can make yummy meals easily so this spin on Korean beef was easy to whip up! The combination of brown sugar, soy sauce, sesame oil, and ginger is savory and sweet at the same time - pair with fresh green onions from my garden? Delicious!
This Korean beef recipe is kid friendly in that not only will they love it, but they can help make it too. That is always a plus!
My husband says it's missing some kick - still trying to figure out what that is. I may add fresh ginger next time instead of ground. We always have that on hand because we eat sushi often.
Korean Ground Beef and Rice Bowls
Ingredients
1 pound lean ground beef
3-4 garlic cloves, minced (I use preminced garlic, about 2 tbsp)
¼ cup soy sauce
1 tablespoon sesame oil
¼ cup brown sugar, packed
½ teaspoon crushed red pepper flakes
½ teaspoon ground ginger
½ teaspoon fresh ground black pepper
2 cups hot cooked white rice
sliced green onions
sesame seeds
Instructions
Cook the ground beef and garlic in a large skillet over medium heat, breaking it into crumbles until no longer pink.
Meanwhile, whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper in a small bowl. Pour sauce over the ground beef after it's cooked through and let simmer for another minute or two.
Serve the Korean Ground Beef over hot rice and garnish with sliced green onions and sesame seeds, and more soy sauce.

Made this last night and the family loved it! It was a tad salty though, so might cut back on the soy sauce a bit next time. I added a bit of cayenne to make it spicier too!
