My Oatmeal Banana Cookies have all the yummy moistness of banana bread in just a few bites. My oatmeal chocolate chip banana bread is one of my most popular, so I thought I'd make it in cookie form. The best part of these healthy oatmeal cookies is not only do they use those ripe bananas in your kitchen, but you only have to dirty up one bowl! Plus, they smell even better than when you are baking banana bread.
Basically this is what happens when an oatmeal cookie recipe marries a banana bread recipe. I've made oatmeal cookies before, but these are just amazing.
I tend to find that high quality ingredients are important while baking. You cannot swap out margarine for butter, but you may have success with shortening. Just tweak the recipe accordingly. The cornstarch is an important thickening agent, and the cloves take the flavor of your easy oatmeal cookies to the next level. Also, don't skip lining your cookie sheet with parchment paper for more even baking and no sticking!
Easy Oatmeal Banana Cookies Recipe
INGREDIENTS for Oatmeal Banana Cookies:
1 cup mashed bananas (this is about two large bananas)
¾ cup salted butter, softened (not melted!!)
1 cup brown sugar, firmly packed
½ cup white sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 ½ cups all purpose flour
½ teaspoon cinnamon
1 teaspoon baking soda
¼ teaspoon ground cloves
2 teaspoon cornstarch
3 cups old fashioned oats (not steel cut, mostly for texture reasons)
DIRECTIONS for Oatmeal Banana Cookies:
Preheat oven to 350 degrees and line your cookie sheets with parchment paper.
In a large bowl or your stand mixer, combine butter, brown sugar, sugar, egg, vanilla extract and mashed bananas. I like to combine the egg, butter and bananas first.
Next add flour, cinnamon, baking soda, cloves and cornstarch and mix.
Finally add in oats.
Using a tablespoon cookie scoop, place dough onto a cookie sheet. Flatten dough with the back of the scoop a little bit so it forms a disk shape. The dough will be a little sticky. Your oatmeal banana cookies will spread a little when baked.
Bake for 10-12 minutes or until edges just start to turn brown.
Cool on cookie sheet for 3-4 minutes, then move to cooling rack with a cookie spatula to finish cooling.
