One Pot Pumpkin Mac and Cheese

This pumpkin mac n cheese is an easy one pot meal.

I’m all about easy meals like mac and cheese. The thing is, a mac and cheese doesn’t have to be boring. Inspired by my new single induction burner, I put together this easy recipe for one pot pumpkin mac and cheese. I can make it in less than 20 minutes, and I only have one pot and a few measuring cups to clean. Talk about easy!

So why add pumpkin to mac and cheese? Pumpkins are a good source of fiber, potassium, and vitamin C, it takes your mac and cheese to a new level, beyond flavor but nutrition too!

Delicious pumpkin mac

One Pot Pumpkin Mac and Cheese

Ingredients for one pot mac and cheese
12 ounces dried pasta of your choice
4 1/2 cups water
3 to 4 tsp minced garlic
2 tablespoons olive oil
2 teaspoons kosher salt
Pinch red pepper flakes
1 cup pumpkin purée (not pumpkin pie filling)
1 cup half and half or heavy cream
1/2 cup shredded Parmesan cheese (not the green can!)
Kosher salt and ground black pepper, to taste
More Parmesan for garnish

Directions for one pot mac and cheese
Combine dried pasta, water, garlic, olive oil, kosher salt, red pepper flakes, and a generous amount of black pepper into a 3 or 4 quart stock pot, and bring to a full rolling boil over high heat.

Stir pasta frequently with your favorite tongs to prevent sticking. Cook approximately 9 to 10 minutes, until al dente.

Remove the pot from the heat. (If there cooking water, pour most but not all into a separate bowl.)

Add the pumpkin purée, cream, and Parmesan cheese, and toss with tongs until smooth and creamy.

Taste and adjust salt and pepper if needed. The sauce will naturally thicken in a few minutes.

Serve with more shredded parmesan.It's easy to cook one pot meals on a induction burner.
