    Apricot Glazed Shrimp with Success Rice

    I'm always looking for ways to create quick and easy dinners, so I'm excited to share my experience as part of this sponsored campaign from Success® Rice.

So I'm on the look out for quick and easy dinners that still taste amazing but I can have on the table in under 15 minutes. I thought it would be challenging, but I found that my first attempt really wasn't all that bad! I used Success Rice a lot in college - 10 minutes and fool proof - I loved it! I figured I could incorporate it into family meals pretty easily.Especially because the hite and brown rice can sit for up to 30 minutes before being served - which is a real win when you're managing 3 kids!

    Quick and Easy Dinners start here: Apricot Glazed Shrimp with Success Rice

    Ingredients
    2 bags Jasmine Success Rice
    ½ pound cooked shrimp from the Seafood department
    2 peppers (one red & green, but you can do whatever you want!)
    ½ cup apricot preserves
    salt and pepper to taste

    Directions
    Following the directions on the box, prepare two bags of Jasmine Succes Rice.

    While your rice is cooking, rough chop two peppers, discarding the seeds. In a largish sauce pan, melt your apricot preserves until it turns into a nice glaze, and toss in your peppers until well coated. Add the shrimp, and warm until heated through. By now, your rice should be just about done.
