You guys, the weather here in Seattle has been crazy! Plus, with school being back in session after two weeks off, the cooties are back in the house too. I need some hearty soup recipes, stat! Luckily, Censie from Building Our Story shared her Sausage Soup Recipe with me, and I cannot wait to make it, because it just sounds so, well, delicious! I know it’s going to be a huge hit!
Ingredients:
1 pound smoked sausage, sliced
1 TBSP oil
1 onion, chopped
1/2 head cabbage, chopped
3 carrots, sliced
3 celery stalks, chopped
8 oz tomato sauce
15 oz kidney beans, drained
28 oz canned diced tomatoes
3 cups water
3 chicken bouillon cubes
1 bay leaf
3 TBSP white rice
1/2 tsp thyme
salt and pepper to taste
Directions:
1. Prepare all of the veggies and sausage as needed.
2. Brown sausage and onion in oil in a large pot.
3. Add cabbage, carrots, celery, tomato sauce, kidney beans, tomatoes, water bouillon cubes, bay leaf, rice, thyme and salt and pepper. Stir well.
4. Let soup come to a boil. Once boiling turn heat down to low-medium.
5. Simmer everything for 2-3 hours. Ready to serve! Enjoy!

This looks like a very thick and manly soup! My husband doesn’t like the ones that are too heave on the broth and light on the meat – thanks for sharing!
