Asparagus. Usually I enjoy it plain or bacon wrapped (oh bacon wrapped asparagus) but boy is asparagus hard to cook. It's usually either too soft or too woody. But then I tried making asparagus in a Sous Vide. Let me tell you, Sous Vide asparagus is perfection. Poached asparagus in butter with fresh mint? Absolutely divine. Since asparagus are only with us a short time each year, this is a recipe you must try this week or you'll be sad.
I love my Sous Vide cooker, and we Sous Vide steak often. But this Sous Vide asparagus recipe is a game changer. Cooking with a precision cooker makes crisp asparagus in under 15 minutes. It's hard to say no to that.
Sous Vide Asparagus with Mint
This recipe makes about 2-4 servings, depending on how large your asparagus bunch is and how much everyone loves asparagus. Once you've made asparagus in a Sous Vide you'll never want it any other way. 🙂
Ingredients for Sous Vide Asparagus
1 bunch asparagus (break at stalk)
3 tablespoons unsalted butter, cut into 3-4 pieces
Sea salt
Fresh mint leaves, sliced in chiffonade
Directions for Sous Vide Asparagus
1.Set the temperature of your Sous Vide Cooker to 185ºF (85ºC).
2. Place asparagus in a vacuum seal bag. Add the butter and a pinch of salt. Seal the bag using a vacuum sealer on the dry setting.
3. Place the bag in the preheated water bath and set a timer for 10 to 12 minutes, depending on the thickness of the asparagus.
4. Remove the bag from the water bath when your timer goes off. Carefully open the bag and remove the asparagus spears, arrange on a serving plate. Spoon some of the butter from the bag over the spears. Garnish with sea salt and mint leaves.
