    Butterscotch Cereal Bars

    These butterscotch coconut cereal bars are easy peasy to make and enjoy while waiting in line to see Star Wars™ #FoodAwakens AD

    Once upon a time, there was a little boy who loved Star Wars™. My husband Alan's earliest memories of Star Wars are in 1977, when he saw the cover of TV Guide. His Dad took him to see the film in a little theater in Columbus OH and the rest was history.

    I followed the Star Wars™ footsteps shortly after, and started my journey in 1980 when I saw the "second movie" in theaters. I cannot tell you how many times we've seen the Star Wars movies or how many versions we own. We have toys, Christmas ornaments, coffee mugs, cookie cutters and more. We love Star Wars™. We have tickets for the first Star Wars™ movie since 2005 (not counting the animated series) on December 17, technically before it opens in theaters. THEN, we're taking our kids to see the movie that Saturday.

    While our kids love Star Wars™ too, the premiere is all about us. Sorry kids. I'm doing you a favor. Despite that we have our tickets already, we'll be headed to the theater several hours before showtime, and I know that that won't fly with you.

    Waiting hours in line for this small space movie (heh) means we're going to get hungry. We're going to need some Star Wars™ Snacks! I'm going to make cereal bars because they are super easy and delicious. It certainly helps that the Star Wars™ Honey Nut Cheerios® I picked up at Walmart with the super cool Star Wars™ packaging has a SPACE ROBOT TOY inside! Don't tell the kids.

     

    Okay, you can tell the kids, I bought three boxes so they could each have one. Sorry Alan, you'll have to get your own box. I also picked up some Star Wars™ Go-Gurt, because who can resist portable Star Wars™ themed yogurt? Not this fan!

    The hardest part about making these Star Wars™ snacks with Honey Nut Cheerios® is waiting to eat them. Combining the ingredients takes less than 5 minutes, but then you have to wait for them to firm up in the pan, which is anywhere between 1-3 hours depending on how impatient you are. It's sheer torture. The added benefit is your kitchen will smell delicious.

    It's highly likely you'll have all the ingredients in your kitchen if you're a baker like me, but if not, pick them up when you get your Honey Nut Cheerios® and GoGurt at Walmart.
    Easy Star Wars™ snacks to enjoy #FoodAwakens

    Easy Butterscotch Coconut Cereal Bars

    Ingredients:
    ¼ cup unsalted butter, sliced/cubed for easer melting
    ¼ cup light corn syrup
    ¼ cup packed light brown sugar
    1 tablespoon vanilla extract
    3 cups Honey Nut Cheerios
    ¼ cup shredded coconut
    ½ cup butterscotch chips, plus about 2 tablespoon aside for drizzling
    pinch sea salt

    Instructions:
    1. Prepare a 8-inch square pan with aluminum foil, letting the edges overhang slightly. Spray evenly with cooking spray.
    2. In a large microwave-safe bowl, combine butter, honey, brown sugar, and heat on high power for 3-4 minutes, stopping every minute to stir mixture. Use caution when stirring as the mixture begins to caramelize and get bubbly as it may cause burns.
    3. Remove from microwave and add vanilla. Mixture will bubble up.
    4. Stir in the Honey Nut Cheerios, coating evenly.
    5. Stir in the butterscotch morsels and shredded coconut, the morsels may get melty and that’s okay.
    6. Spread your Honey Nut Cheerios mixture into your prepared pan, using a spatula to spread it evenly. Lightly buttering the spatula will help keep it from sticking)
    7. Cover tightly and place pan in fridge to set up for at least 2 to 3 hours completely set before cutting, you can also freeze for one hour .
    8. Drizzle with butterscotch and sprinkle with sea salt.
    9. Cut into approximately 12 bars.
    10. Keep in the refrigerator for about two weeks, can be frozen in an airtight container for up to 6 months. Wrap in waxed paper before placing into a container to protect flavors.
