You guys, I came across this really amazing, really easy recipe for strawberry sandwich cookies. I have loved those vanilla wafer cookies since I was a kid, and the idea of combining them with strawberries? Seriously? SIGN ME UP!
Sandwich Strawberry Cookies
Ingredients
16 medium size strawberries
1 cup whipped topping
a whole mess of vanilla wafer cookies
Directions
De-head strawberries and slice or chop them into small pieces. Combine with whipped topping. (Sometimes whipped topping does funny things if overmixed, so be careful)
Once well combined, spread strawberry whipped topping mixture on one vanilla wafer cookie, and top with another one making a sandwich.
Chill before serving.
