Preheat a grill pan medium-high on the stove.
Brush the grill pan with olive oil using a pastry brush.
Sprinkle fresh chicken breasts with salt and pepper and place the chicken in the pan.
Grill the chicken without moving them or about five minutes, until the undersides develop golden brown grill marks. Carefully flip the chicken using a pair of tongs and cook on the second sides for another five minutes. Remove the chicken from the grill pan when the internal temperature reaches 165 degrees using a meat thermometer. Let chicken rest, then cut it into bite sized chunks.
Arrange your pita triangles on a plate, then drizzle with tzatziki. Top with cucumbers, tomatoes and olives. Finish with your chicken and garnish with feta. Then enjoy!
