  • 1 1/4 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 3 tsp canola oil
  • 3 large eggs beaten
  • 3 large bananas ripe and mashed
  • 1 cup uncooked old fashioned oats
  • 1/2-3/4 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts optional

  • Preheat oven to 350°F. Grease a loaf pan and set aside.
  • Now, I use a (affiliate) KitchenAid Stand Mixer, but you can do this by hand too. Combine your bananas, eggs and oil in your mixing bowl.
  • In a large bowl, stir together dry ingredients (except the walnuts and chocolate chips). Slowly add the dry mixture to your wet mixture.
  • Once combined add the walnuts and chocolate chips. Mix until just blended then pour into your prepared pan.
  • Bake for 45-50 minutes or until golden brown. Remove from oven and let cool for about 5 minutes before removing from the pan. Then, let your oatmeal chocolate chip banana bread sit on cooling rack for another 10 minutes before slicing.
