Greek Inspired Chicken Nachos

  • 1 pound Foster Farms Simply Raised Chicken Breasts
  • 1 package of pita bread cut into triangles
  • 1 cup of tzatziki prepared fresh or purchased
  • 1 cucumber peeled, seeded and diced
  • 2-3 fresh tomatoes diced
  • ¼ cup olives
  • ½ cup feta cheese


  • Preheat a grill pan medium-high on the stove.
  • Brush the grill pan with olive oil using a pastry brush.
  • Sprinkle fresh chicken breasts with salt and pepper and place the chicken in the pan.
  • Grill the chicken without moving them or about five minutes, until the undersides develop golden brown grill marks. Carefully flip the chicken using a pair of tongs and cook on the second sides for another five minutes. Remove the chicken from the grill pan when the internal temperature reaches 165 degrees using a meat thermometer. Let chicken rest, then cut it into bite sized chunks.
  • Arrange your pita triangles on a plate, then drizzle with tzatziki. Top with cucumbers, tomatoes and olives. Finish with your chicken and garnish with feta. Then enjoy!
