Taco Ramekins

  • 1/2 pound lean ground beef
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups biscuit/baking mix
  • 6 tablespoons cold water
  • 1/2 cup chopped green and red peppers
  • 4 tablespoons sour cream
  • 4 tablespoons mayonnaise
  • 4 tablespoons shredded cheddar cheese
  • 2 tablespoon chopped onion


  • In a skillet, saute onions and green pepper. Add ground beef and cook over medium heat until no longer pink; drain. Stir in the chili powder, salt and pepper. Remove from the heat and set aside.
  • Combine biscuit mix and water to form a soft dough. Press onto the bottom and up the sides of four 10-oz. ramekins or custard cups coated with vegetable shortening. Fill with meat mixture.
  • Mix the sour cream, mayonnaise and cheese; spread evenly over the tops.
  • Bake, uncovered, at 375┬░ for 20-25 minutes or until heated through.


Topping ideas: lettuce, black olives, chopped tomatoes, salsa and a squeeze of fresh lime.
