    Round 1: Hummus : College Basketball Tourney Shoot-Out

    As promised, here’s your first bite into this years college basketball championship tournament. I"m excited to continue my partnership with Comcast and share all of this with you!

    With over 120 hours of viewing in your future, you don’t want to go hungry. I’m sharing with you the first of several recipes that are sure to be a hit whether you’re watching college basketball with your family or friends.

    Hummus is one of my go-to recipes for entertaining because it’s easy – packs protein and it’s easy to pair with chips and veggies alike. It’s really easy to make too. Hummus is traditionally made with cooked and mashed chickpeas, you can use other beans. It’s blended with tahini, olive oil, lemon juice and garlic, with salt and pepper to taste. If you have a blender, you can make it happen.

    Here’s how I typically make hummus, the nice thing is, and it’s easy to make it your own.

    Easy Hummus

    Ingredients
    2 cups drained cooked chickpeas, save liquid
    1-2 tablespoons minced garlic (about 2-3 cloves)
    ⅓ cup virgin olive oil
    1 tablespoon ground cumin
    juice of 1 lemon
    salt and pepper to taste

    Directions
    Combine all of the ingredients in a blender or food processor and puree until smooth, adding the chickpea liquid as needed.
    Taste and add more lemon juice, cumin etc as desired. Serve drizzled with olive oil and a little cumin sprinkled on top for color!
