    Chex Mix Recipe: Leprechaun Bait

    Awhile back, the great people at Chex asked me to share some popular Chex Recipes with you all. I actually made a fantastic batch of Mexican Hot Chocolate Chex Mix and then it got eaten before I could take photos. Note to self, do not make Chex Mix without a PLAN if you need to take photos. 🙂

    One of the things I love about Chex cereal is it's a great starting point for gluten free snacks. There are lots of recipes and ideas on the Chex website and Pinterest too.

    With St. Patrick's Day around the corner, I decided to take my own spin on Chex Mix and make Leprechaun Bait Chex Mix. It's quite delicious if I do say so myself!

    Chex Mix Recipe Leprechaun Bait

    Chex Mix Recipe: Leprechaun Bait

    Ingredients
    2 cups Vanilla Chex® cereal
    2 cups Chocolate Chex® cereal
    2 cups Rice Chex® cereal
    ¼ cup butter, at room temperature
    1 cup white "chocolate" chips
    ¼ cup sweetened condensed milk
    1 cup green m&ms
    1 cup pretzels
    Directions
    1. In large microwaveable bowl, measure cereal. - I like using a big measuring cup, the handle makes it easy to work with.
    2. In 2-cup microwavable measuring cup, heat butter and white chocolate chips on High 1 minute or until almost melted; stir and microwave another 30 seconds or until mixture can be stirred smooth. Be careful not to overheat or you will scorch your chocolate! Stir in condensed milk, heat 30 seconds.. Pour over cereal mixture, stirring until evenly coated.
    3. Microwave on High about 3 minutes, stirring every minute with a spatula, until mixture is glazed. Allow to cool just a tiny bit before you add your M&Ms and pretzels or the chocolate candies will crack and melt - trust me! Pour into a roaster or wax lined pan to cool. I like using a roaster because it's easier to stir the mix if needed.

      What a great snack for the kiddos after school, or for me to take to the office. We are snackers where I work, the girls would love this. I am going to make this one day this week I am sure our Doctors and girls will be thanking you lol,.

      This is such a cute Idea. I always make a big deal about holidays for my kids as I want them to have fun and remember traditions! Last year we did a St Paddy day breakfast (green jelly, green pancakes, green milk, etc) & I also had a leprechaun pee in the potty with foot prints 😉 So I'll be doing this, this year!
