    Taco Ramekins

    Taco Ramekins are an easy dinner recipe!

    Taco ramekins are one of my favorite easy dinner recipes. Who doesn't love their own mini taco casserole? This recipe is easy to double (we usually do) and can be reheated for lunch the next day.

    Make these mini taco casseroles!

    Ingredients
    ½ pound lean ground beef
    ½ teaspoon chili powder
    ¼ teaspoon salt
    ¼ teaspoon pepper
    1 ½ cups biscuit/baking mix
    6 tablespoons cold water
    ½ cup chopped green and red peppers
    4 tablespoons sour cream
    4 tablespoons mayonnaise
    4 tablespoons shredded cheddar cheese
    2 tablespoon chopped onion

    Instructions
    In a skillet, saute onions and green pepper. Add ground beef and cook over medium heat until no longer pink; drain. Stir in the chili powder, salt and pepper. Remove from the heat and set aside.

    Combine biscuit mix and water to form a soft dough. Press onto the bottom and up the sides of four 10-oz. ramekins or custard cups coated with vegetable shortening. Fill with meat mixture.

    Mix the sour cream, mayonnaise and cheese; spread evenly over the tops.

    Bake, uncovered, at 375° for 20-25 minutes or until heated through.

    Topping ideas: lettuce, black olives, chopped tomatoes, salsa and a squeeze of fresh lime.
